Jason Joyce was drawn to winemaking for its inherent ability to be both art and science. He originally planned to join the team for one harvest as a cellar hand before returning to his early scientific career in the Bay Area but has never left. The room for spontaneity, exploration, and freedom of expression in wine making kept Jason at Calcareous. Winemaking offered a meaningful connection to people, place, and the experience of sharing a bottle. Captivated by the Calcareous Estate, Jason developed a deep understanding of the vineyard and the distinctive character of fruit grown in the elevation and calcareous soils of Paso Robles. Over the years he learned the craft through hands-on experience producing small batch, high-quality wine, and his dedication ultimately led him to become head winemaker in 2010. Jason’s approach is rooted in respect for the vineyard. He believes the estate’s soil, elevation, climate, and exposure provide the foundation for wines with a distinct sense of place. Rather than imposing a style on the fruit, he makes thoughtful decisions in the cellar to bring out its character.
