The Massachusetts native relocated to California after his graduation from New York’s prestigious CIA, and started his career at Joachim Splichal’s famed Patina in Los Angeles, where he learned to incorporate whimsical elements into classic French cooking. In 1994 Paul joined Master Sommelier Larry Stone and restaurateur Drew Nieporent at San Francisco’s iconic Rubicon restaurant, where, as Chef de Cuisine, Paul won the coveted James Beard award. On this HAL Amsterdam sailing, Paul shares secrets of his unique cuisine, and leads our group in exclusive hands-on demonstrations, preparing some of the popular dishes he creates at Americano.
